Design Details
This project represents Phase 02 of ONE80 Tal-Belt, extending the architectural language of the main restaurant into the basement level through the design of a private dining room and a wine cellar. Conceived as a continuation rather than a departure, the intervention carries the material and spatial logic of the restaurant below ground, transforming a constrained subterranean footprint into a composed and versatile environment.
Access to the basement presented a significant constraint, influencing both construction methodology and design resolution. Narrow circulation routes required all custom furniture and joinery to be designed for on-site assembly, reinforcing a highly controlled and deliberate approach to detailing. The absence of natural light was addressed through carefully calibrated artificial lighting, ensuring the spaces feel contained and atmospheric rather than enclosed or subterranean.
The private room was designed to accommodate multiple modes of use within a single spatial framework. While primarily functioning as an intimate dining space, concealed within the bespoke wall panelling is an integrated audiovisual and conferencing system, allowing the room to transition seamlessly into a meeting environment without altering its architectural character. Flexibility is achieved through integration rather than visual compromise.
Adjacent to this, the wine cellar was conceived as both a functional and experiential space. Custom-designed elements allow the room to operate as a cellar for storage while also adapting, through minor reconfiguration, into a setting for wine tasting. Material continuity with the main restaurant reinforces the relationship between levels, anchoring the cellar as an extension of the dining experience rather than a separate amenity.
Through careful control of sequence, materiality, and lighting, the project deliberately challenges the perception of being below ground. The resulting spaces are intimate yet composed, ensuring that once inside, the sense of enclosure associated with basement interiors is replaced by clarity, warmth, and architectural continuity.

Engaging KEIRO for our design and architectural needs for our two latest projects within our Group was a decision we will not regret for the expansion of our brand.
The projects are ‘one80 St. Christopher Str. Valletta, Malta’ and ‘one80 Izakaya, Mgarr Gozo’.
KEIRO demonstrated professionalism, skill, innovation and time management for our two projects happening mutually in a set time frame 2022 Q3 and Q4 and 2023 Q1. They have created the design aspects of the projects and gave them identity in line to our brief and vision. The design was so professionally executed, the Valletta restaurant project won the People’s Choice Award in the MASP Awards Ceremony hosted by the Planning Authority.
KEIRO is a one-stop shop and made the process easier since apart from our design needs they also assisted us with the notarial requirements for the two projects, one of which required inception from construction stage. KEIRO sourced the contractors and took over the management of the projects on the floor whilst allowing us to continue focusing on our other outlets already in operation within the Group.
Keith and Rosianne Schembri were always on call, approachable and by our side for anything that needed their support during the process.
